Ginza Ichiban Cuisine is located at 100 785 Rita Rd., Quesnel, BC V2J 0C2. We are currently looking for a permanent, full time Sushi Chef. Position: Sushi Chef Wage: CAD$35.00/hour Types: Full-time, Permanent (various shifts, including evening, weekends, and holidays) Working hours: 30-40 hours/week Benefits: 4% of vacation pay Job Duties: • Plan and instruct kitchen staff in preparation, cooking, garnishing and presentation of sushi foods • Develop and execute seasonal or special sushi menus to attract and retain customers in collaboration with management • Create special house sauce and new recipes to improve tastes and qualities of the dishes • Maintain precise portioning, seasoning, and presentation standards • Prepare all types of sushi including nigiri, sashimi, maki, specialty rolls, chef’s specials, and specialty foods • Ensure health regulations and food safety policies are followed • Demonstrate new techniques and equipment • Supervise and train kitchen staff • Coordinate with suppliers and management to order and receive fresh, high-quality ingredients • Arrange repair and purchase of equipment • Prepare dishes for customers with food allergies Job Requirements: • Completion of secondary school; • Minimum 3 years of experience in commercial food preparation required. • Cook's trade certification is an asset • Proficiency in fish filleting, including cleaning, boning, and slicing is an asset • Skills demonstration may be required.
