1. Position Summary
The Bartender / Mixologist & Barista will be responsible for delivering a high-quality beverage experience within the hotel’s bar, lounge and coffee service areas. The role requires a strong combination of professional bartending, cocktail preparation, mixology, guest service and coffee/barista skills.
The successful candidate will help create a refined but approachable bar experience for hotel guests, airport travelers, business clients and external visitors. The role will cover daytime coffee service and evening bar operations, including cocktails, wines, spirits, beers, mocktails and light beverage-led service.
This position is important to support the hotel’s F&B concept, including a more advanced bar setup with quality cocktails, consistent service standards, product knowledge and strong guest engagement.
2. Key Responsibilities
Bar & Mixology Operations
Prepare and serve alcoholic and non-alcoholic beverages according to approved recipes, hotel standards and guest preferences.
Prepare classic cocktails, signature cocktails, mocktails and seasonal beverages with consistency, speed and presentation quality.
Support the development of a creative drinks menu suitable for an airport hotel bar/lounge concept.
Ensure correct use of spirits, wines, mixers, garnishes, glassware, bar tools and equipment.
Maintain excellent knowledge of spirits, liqueurs, wines, beers, cocktail techniques and current bar trends.
Upsell premium beverages, signature cocktails and food pairings where appropriate.
Ensure responsible service of alcohol and compliance with hotel policies and Ghanaian regulations.
Monitor guest consumption and handle alcohol service professionally and discreetly.
Coffee & Barista Service
Prepare high-quality espresso-based beverages including espresso, cappuccino, latte, flat white, macchiato, mocha and iced coffee drinks.
Operate and maintain commercial coffee machines, grinders and related equipment.
Ensure proper coffee extraction, milk texturing, latte art where applicable, and consistent beverage quality.
Support daytime coffee service, especially for hotel guests, meetings, lobby lounge and external walk-in customers.
Maintain knowledge of coffee beans, brewing methods, milk alternatives and café-style service.
Guest Experience
Deliver warm, professional and efficient service in line with Hilton/Hampton service culture.
Engage guests confidently and make beverage recommendations based on their preferences.
Create a welcoming atmosphere at the bar and lounge.
Handle guest feedback, complaints and special requests professionally.
Recognize repeat guests and remember preferences where possible.
Support the positioning of the bar as a comfortable, quality-driven destination for both hotel guests and external customers.
Bar Setup, Cleanliness & Mise en Place
Prepare the bar before service, including garnishes, juices, syrups, glassware, ice, tools and stock.
Ensure all bar areas are clean, organized and ready for operation at all times.
Maintain high hygiene and food safety standards in accordance with hotel policies.
Clean and sanitize coffee machines, bar tools, counters, fridges, sinks and service areas.
Ensure correct opening and closing procedures are followed daily.
Stock Control & Cost Management
Assist with daily stock checks, requisitions and inventory control.
Monitor usage of spirits, wines, coffee, syrups, mixers, garnishes and other consumables.
Minimize wastage, over-pouring, breakages and spoilage.
Follow approved recipes and portion control standards to protect beverage cost.
Report low stock, damaged stock or slow-moving items to the supervisor.
Support monthly inventory and beverage cost control activities.
Cash Handling & POS
Process guest orders accurately through the POS system.
Ensure correct charging to rooms, cash, card or other approved payment methods.
Follow hotel cashiering procedures and maintain accountability for sales transactions.
Coordinate with Finance/F&B Cost Control where required.
Compliance & Brand Standards
Follow Hilton/Hampton brand standards, hotel SOPs, hygiene requirements and service procedures.
Comply with health, safety, fire and security procedures.
Respect hotel grooming standards and uniform requirements.
Maintain professional conduct and confidentiality at all times.
Support audits, inspections and brand reviews when required.
3. Required Qualifications & Experience
Minimum 3 to 5 years of experience as a bartender, mixologist or bar supervisor in a hotel, premium restaurant, cocktail bar, airport lounge or high-quality hospitality environment.
Practical experience preparing cocktails, mocktails, spirits, wines, coffee and espresso-based beverages.
Prior experience in a hotel environment is strongly preferred.
Formal training in bartending, mixology, barista skills, hospitality or F&B service is an advantage.
Knowledge of international cocktails and classic drinks is required.
Good understanding of coffee machine operation and espresso preparation.
Experience with POS systems and stock control is an advantage.
Experience in a branded hotel environment such as Hilton, Marriott, Radisson, Accor, IHG or similar is a strong advantage.

7. Reporting Line
The Bartender / Mixologist & Barista will report directly to the Food & Beverage Manager or Restaurant & Bar Manager, and will work closely with the Head Chef, F&B Cost Controller, Finance Team and Operations Manager.
