Address: THE TRUSTEE FOR SHAHI DARBAAR UNIT TRUST T/A Shahi Darbaar Job Title: Full-time Indian Cook Job Location: 10A E Esplanade, St Albans Vic 3021 Salary: $76,600 plus superannuation Duties and Skills • Prepare and cook a wide variety of authentic Indian dishes, including regional curries, biryanis, tandoori items, snacks, and Indo Chinese. • Collaborate with the head chef and kitchen team to develop new dishes and refine existing recipes in line with customer preferences and seasonal ingredients. • Maintain high standards of food presentation and monitor dish quality throughout all stages of preparation and service. • Assist in menu planning by contributing ideas for special items and estimating food and labour costs to support efficient kitchen operations. • Operate and regulate ovens, grills, fryers, and tandoor ovens, ensuring correct temperatures and cooking times are followed for optimal results. • Adhere to food safety regulations and hygiene standards as per Australian Food Standards Code and ensure all food handling practices are compliant. • Supervise and support junior kitchen staff, contributing to their training and ensuring a smooth kitchen workflow. • Monitor and manage stock levels, assist with ordering supplies, and ensure proper storage and rotation of ingredients. • Maintain cleanliness and organisation of workstations and kitchen equipment, ensuring compliance with WHS and OH&S standards. • Liaise with the restaurant’s management team to ensure service consistency and to support operational goals. • Assist in the coordination of kitchen activities to ensure timely and quality food service during peak hours. Qualification and Experience: • Minimum Cert III in commercial cookery • Minimum one year of experience in the related field is mandatory • Experience cooking all Indo-Chinese will be advantage • Are available across the working week including weekends and Public Holidays. • Strong knowledge of Indian cuisine, cooking techniques, and kitchen management. • Offer proven ability to prioritise, set goals and have the determination to achieve them. • Possess a thorough understanding of food safety and HACCP. • Understand cost control, time management, prioritization, and cost-efficient procurement practices. • Able to cook all chat foods • Able to prepare new special menu items is highly considered • Passion for food and commitment to high standards of quality and hygiene. • Strict compliance towards food safety How to apply: Applications open on 5 May 2026 and close on 4 June 2026.
