DiMaggio’s Cafe Pty Ltd Trading Name: Fratelli Pizza Pasta Business Address: 227 Cranbourne Road, Frankston VIC 3199 Full Time Chef (Italian Cuisine) SALARY RANGE - $75,000 to $85,000 + SUPERANNUATION About the Employer Fratelli Pizza Pasta, operated by DiMaggio’s Cafe Pty Ltd, is a well-established Italian restaurant located in Frankston, Victoria. We specialise in authentic Italian cuisine prepared using fresh, locally sourced ingredients. The restaurant operates 7 days a week for lunch and dinner, with a seating capacity of approximately 250 customers plus takeaway service. We pride ourselves on delivering high-quality Italian comfort food in a fast-paced trattoria-style environment. Position Purpose The Full-Time Chef will be responsible for preparing, cooking, and presenting high-quality Italian dishes in accordance with restaurant standards and traditional Italian recipes. The role involves supervising kitchen operations, maintaining food safety and hygiene standards, managing stock and supplies, and training kitchen staff. The position is essential to the ongoing success and reputation of the business by ensuring consistent quality and efficiency in kitchen operations. Key Duties and Responsibilities The Chef’s duties will include but are not limited to: 1. Menu Planning & Development • Design and plan Italian menus, including seasonal dishes and daily specials. • Develop and introduce new dishes in line with Italian cuisine and restaurant standards. • Ensure menus are cost-effective and meet customer expectations for authentic Italian cuisine, taking into account food and labour costs. 2. Food Preparation & Cooking • Prepare ingredients by cutting, mincing, slicing, and dicing as required. • Cook and plate dishes in accordance with Italian Trattoria-style recipes and restaurant standards. • Ensure correct portioning, seasoning, and presentation of all dishes. 3. Quality & Safety Control • Inspect and maintain quality and freshness of ingredients. • Ensure full compliance with food safety, hygiene, and sanitation standards. • Monitor and maintain the serviceability of kitchen equipment. 4. Stock & Cost Management • Estimate food and ingredient requirements and manage daily stock levels. • Order and receive supplies, ensuring minimal wastage. • Assist management in maintaining control of food and labour costs and budgeting. 5. Supervision & Staff Development • Oversee kitchen staff and ensure efficient workflow and teamwork. • Train and mentor junior kitchen staff in food preparation and safety standards. • Promote a positive and professional kitchen culture. 6. Kitchen Operations & Coordination • Manage and coordinate kitchen operations during service periods to ensure smooth and efficient service delivery. • Liaise with management on menu updates, food presentation, and kitchen performance. • Communicate effectively with front-of-house staff to ensure seamless service. 7. Other Duties • Perform other related tasks as directed to support the operation of the business. Reporting Line Reports directly to: Restaurant Head Chef Supervises: Cooks and Kitchen Assistants Skills, Qualifications and Experience Required • Minimum of Certificate IV in Commercial Cookery or equivalent qualification. • Relevant full-time experience as a Chef, preferably specialising in Italian cuisine. • Demonstrated ability to prepare and cook a variety of Italian dishes in a fast-paced environment. • Strong knowledge of Italian ingredients, cooking methods, and traditional recipes. • Excellent leadership and communication skills. • Strong time management and organisational abilities. • Commitment to maintaining high food quality, consistency, and hygiene standards. • Ability to work effectively in a team environment and under pressure.
