Head Chef €36,605 per annum – 39 hours per week Permanent | Full Time Biddos Street Food Limited is seeking to recruit an experienced Head Chef for its specialised Tex-Mex catering and mobile kitchen operation based in Drogheda, Co. Louth. Location: Biddos Street Food (Preparation Kitchen) Foxhall House, Ferney Park, Monasterboice, Drogheda, Co. Louth, A92 Y2F3 The role also involves catering and mobile food service operations at licensed trading and event locations within Co. Louth and surrounding areas. Duties and Responsibilities: Lead and supervise all kitchen and food preparation operations Prepare authentic Tex-Mex and Mexican-inspired cuisine from fresh ingredients Oversee preparation of handmade corn tortillas, sauces, marinades, salsas, and slow-cooked birria dishes Prepare traditional corn tortillas from scratch using authentic preparation techniques and dough handling methods Manage menu planning, recipe development, portion control, and quality assurance Ensure HACCP and food safety compliance across all kitchen operations Monitor stock levels, supplier orders, food storage, and inventory management Coordinate staffing requirements for catering events and supervise temporary event kitchen staff Train, direct, and oversee kitchen assistants and event-based catering staff during food preparation and service operations Coordinate catering preparation and event-based food service operations Maintain consistency, hygiene standards, and workflow management across all catering and mobile kitchen activities Requirements: Minimum 5 years’ professional culinary experience in a Head Chef, Sous Chef, or senior kitchen management role Strong experience in Tex-Mex, Mexican, Latin American, or international cuisine Proven experience preparing fresh food from raw ingredients and managing complex food preparation processes Experience preparing handmade corn tortillas using traditional methods Experience with slow-cooked meat preparation, sauces, marinades, and professional kitchen workflow Strong knowledge of HACCP procedures and food safety compliance Experience supervising kitchen teams and coordinating catering staff during events Excellent leadership, organisational and communication skills Terms: Full-time permanent position Salary: €36,605 per annum based on 39 hours per week
